  1. Easy Chicken Fajitas
  2. Ingredients
  3. 1 teaspoon pure chile powder
  4. 1 teaspoon kosher salt
  5. 1/2 teaspoon ground cumin
  6. 1/2 teaspoon onion powder
  7. 1/4 teaspoon garlic powder
  8. 1 tablespoon cornstarch
  9. 1/4 cup water
  10. 3 tablespoons extra-virgin olive oil
  11. 1 whole skinless, boneless chicken breast (about 1 pound), cut into 1/2-inch strips
  12. 1 green bell pepper—cored, seeded and cut into thin strips
  13. 1 medium onion, thinly sliced
  14. 2 tablespoons fresh lime juice, plus lime wedges for serving
  15. 8 flour tortillas, warmed in the microwave
  16. Shredded lettuce, shredded cheddar cheese, salsa and sour cream, for serving
  17. In a resealable plastic bag, combine the chile powder with the salt, cumin, onion powder, garlic powder, cornstarch, water and 2 tablespoons of the oil. Add the chicken, bell pepper and onion, seal and knead gently to coat. Refrigerate for 15 minutes.
  18. Heat the remaining 1 tablespoon of oil in a large nonstick skillet until shimmering. Empty the contents of the bag into the skillet and cook over high heat, stirring occasionally, until the vegetables are crisp-tender and the chicken is cooked through, about 6 minutes. Remove from the heat and stir in the lime juice.
  19. Transfer the chicken and vegetables to a large bowl and serve with the warmed tortillas, lettuce, cheese, salsa, sour cream and lime wedges.

  22. How to Bake Chicken Breasts in Barbeque Sauce

  24. Baked chicken breasts with barbecue sauce are a simple main course you can cook quickly and easily, for a large gathering or a small family meal. For the healthiest preparation, use skinless chicken breasts. The fat in the skin keep the meat moist when cooked alone, but it isn't needed if you cover the chicken with barbecue sauce. Also, use homemade or no-sugar-added barbecue sauce when possible.

  26. Preheat oven to 350 F.

  28. Pat the chicken breasts dry with paper towels.

  30. Brush with the barbecue sauce.

  32. Sprinkle with sea salt or kosher salt and freshly ground black pepper to taste.

  38. Lemon Butter Chicken Breasts

  41. medium boneless skinless chicken breast halves (1-1/2 pounds)

  43. cup all-purpose flour

  47. teaspoons lemon pepper seasoning

  56. Place each chicken breast half between two pieces of plastic wrap. Pound lightly into a rectangle about 1/4 to 1/8 inch thick. Remove plastic wrap. In a shallow bowl, combine the flour and salt. Coat chicken breasts with flour mixture. Sprinkle chicken breasts with lemon pepper.
  57. In a 12-inch skillet cook the chicken breasts in the hot butter, half at a time, over medium-high heat for about 3 minutes on each side or until brown and no longer pink. Remove chicken from skillet. Add lemon slices to skillet; cook for 2 to 3 minutes or until lightly browned, turning once. Return all of the chicken to the skillet, overlapping chicken breasts slightly. Drizzle lemon juice over the chicken breasts. Cook for 2 to 3 minutes more or until pan juices are slightly reduced. Serve chicken, lemon slices, and pan juices over hot cooked rice or pilaf, if desired. Makes 6 servings.

  59. 1 1/2 lbs lean ground turkey
  60. 2 cups brown rice
  61. 1/2 jar spaghetti sauce of your choosing
  62. 6 medium sized bell peppers, tops and seeds removed

  65. Preheat oven to 400°F.
  66. Remove tops and seeds from peppers and discard. place peppers in large pot and boil until peppers float. While peppers are boiling, cook rice. Brown turkey in separate frying pan, also while peppers are boiling, drain. After turkey is browned, remove from heat and add rice and sauce, stirring together. Add in garlic powder if desired.
  67. Fill peppers with rice/meat mixture.
  68. Bake at 400°F for approxinamtely 35 minutes, or until peppers begin to brown. Sprinkle sheredded cheese if desired over peppers and remove from oven.

  337. 1 red, orange and green bell pepper, julienned

  340. 2 1/2 tsp chili powder
  341. 2 tsp ground cumin
  342. 1 tsp paprika
  343. 3/4 tsp ground coriander

  351. Pour half of the canned tomatoes into the bottom of a slow cooker and spread into an even layer. Top with half of the peppers and half of the onions. Sprinkle garlic in. Top with chicken breasts.
  352. In a bowl whisk together chili powder, cumin, paprika, coriander, salt and pepper. Evenly sprinkle half of the seasoning over chicken breasts then flip chicken and sprinkle in remainder. Top with remaining half of the tomatoes, then layer in remaining peppers and onions.
  353. Cover and cook on HIGH heat 3 - 4 hours or low heat 6 - 8 hours, until chicken has cooked through and veggies are tender (note that if you want to be able to cut chicken into strips cook more near lesser time on HIGH or LOW, otherwise it will probably just shred, which is also fine).
  354. Remove chicken, and cut into strips, or shred. Ladle out 1 cup of the broth in slow cooker (mostly tomato liquid) and discard. In a small bowl whisk together lime juice and honey and add to slow cooker along with chicken and season with additional salt to taste if desired. Gently toss. Sere warm in warmed tortillas with sour cream and optional guacamole, cheese and salsa.

  450. 1 (12 pound) whole turkey, neck and giblets reserved

  455. 1/2 bunch fresh sage
  456. 1/2 cup butter
  457. 1 bay leaf

  467. Preheat oven to 325 degrees F (165 degrees C).
  468. Mix 2 tablespoons salt, and 1 tablespoon pepper, and poultry seasoning in a small bowl. Tuck turkey wings under the bird, and season cavity with about 1 tablespoon of the poultry seasoning mixture. Reserve remaining poultry seasoning mix.
  469. Toss the onion, celery, and carrots together in a bowl. Stuff about 1/2 cup of the vegetable mixture, rosemary sprigs, and 1/2 bunch sage into the cavity of the turkey. Tie legs together with kitchen string. Loosen the skin on top of the turkey breast using fingers or a small spatula. Place about 2 tablespoons butter under the skin and spread evenly. Spread the remaining butter (about 2 tablespoons) all over the outside of the skin. Sprinkle the outside of the turkey with the remaining poultry seasoning mix.
  470. Spread the remaining onion, celery, and carrots into a large roasting pan. Place the turkey on top of the vegetables. Fill the pan with about 1/2 inch of water. Arrange a sheet of aluminum foil over the breast of the turkey.
  471. Roast the turkey in the preheated oven until no longer pink at the bone and the juices run clear, about 3 1/2 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (75 degrees C). Remove the foil during the last hour of cooking. Baste the turkey with the pan juices.
  472. While the turkey is roasting, make stock: place neck, heart, and gizzards in a saucepan with the bay leaf and water. Simmer over medium heat for 2 hours. Strain the turkey giblets from the stock, and discard giblets. There should be at least 4 cups of stock.
  473. Remove the turkey from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 to 15 minutes before slicing. Pour the pan juices, about 3 cups, into a saucepan and set aside. Skim off the turkey fat from the pan juices, reserving about 2 tablespoons.
  474. Heat 2 tablespoons of the turkey fat and 1 tablespoon butter in a saucepan over medium heat. Transfer the onion from the roasting pan into the skillet. Cook and stir until the onion is browned, about 5 minutes, then stir in the flour. Continue to cook and stir for about 5 minutes more; whisk in 4 cups of the skimmed turkey stock and the reserved pan juices until smooth; skim off any foam. Stir in the balsamic vinegar. Simmer until the gravy is thickened, whisking constantly, about 10 minutes. Stir in 1 tablespoon of chopped sage, and season to taste with salt and black pepper.

  570. Red lentils are inexpensive but very nutritious. They are a great source of fiber, protein, iron and much more. They are very easy to prepare. If you are not familiar with or have not yet made these a staple, I encourage you to get started now. You'll be pleased you did!
  571. This is my recipe for red lentil soup I made last night. For under $2.50, this recipe makes six servings.
  572. Ingredients
  573. 1/2 cup red lentils (30¢)
  574. 1 large or 2 medium onions (31¢)
  575. 2-4 cloves of garlic (11¢)
  576. 1 carrot (16¢)
  577. 1 potato (15¢)
  578. 1 stalk of celery (16¢)
  579. 1 can of diced tomatoes (97¢)
  580. 1/2 to 1 tsp red pepper flakes
  581. 1 to 2 tsp of salt
  582. 1 to 2 tbsp of oil (15¢)
  583. 2 cups of water
  584. Instructions
  585. Rinse the red lentils in cold water until clear. (If you have extra time, then let the lentils sit in cold water for 30 minutes to soak - this softens them up and reduces cooking time.)
  586. Dice onions. Mince garlic. Finely slice celery. Combine and set aside.
  587. Wash (and optionally peel) carrot and potato. Shred or dice carrot and potato.
  588. Heat oil in pot.
  589. Add red pepper flakes and sauté for about two minutes. Keep stirring.
  590. Add onions, garlic and celery and sauté until softened; about three to four minutes. Keep stirring.
  591. Add carrots and potato and sauté until softened; about three to four minutes if you shredded the veggies and longer if diced. Keep stirring.
  592. Add can of tomatoes. Add red lentils and water. Stir to combine.
  593. Turn heat on high until boiling. Reduce heat, cover pot and simmer for about 20 minutes.
  594. Add salt and stir.
  595. Optional: I like a smooth soup so I give it a whizz with an immersion blender. Then I add half a package of frozen spinach (defrosted and heated in microwave while soup is cooking, extra cost is 50¢) and combine.

  617. 1 cup (150g) raw whole Macadamia Nuts made into butter
  618. 1 cup (220g) Coconut butter (coconut manana) soften or melted, but not HOT
  619. 1/2 teaspoon sea salt (3g)
  620. 2 tablespoons lemon juice (30ml)
  621. 1 rounded teaspoon baking soda (6g)
  622. 1-8 1/2" x 4" loaf pan or (2) 5.5"x3.5" small loaf pans
  623. Place the Macadamia nuts into a large food processor and process on high to achieve a part butter, part chunky nut meal (about 45 seconds)
  624. While still running the processor, drop one egg down the chute and wait for the sound to stabilize to a smooth sound (about 20-30 seconds). Then repeat with the remaining 4 eggs.
  625. Turn off the processor and take a spatula and scrape the walls and bottom edges of the processor bowl to make sure that no large chunks are stuck and it is well mixed. Turn processor back on and slowly add soften coconut butter (manana), and sea salt. Turn it on again and let the added ingredients incorporate. When it's well mixed (about 1/2 a minute), pour the lemon juice down the chute and then the baking soda. Mix for a few more seconds.

  655. 1 medium red onion, sliced 1/4″ thick (I love using my mandoline)
  656. 3/4 cup olive oil
  657. 1/4 cup red wine vinegar
  658. 1 tablespoon dried oregano
  659. 1 teaspoon kosher salt
  660. INSTRUCTIONS
  661. Place the sliced onions in a No Crumbs Left Marinated Onion Bowl. (I highly recommend getting a Marinated Onion Bowl! Holds the onions perfectly, has a pour spout so you can easily pour the onion marinade, and is such a gorgeous piece of pottery!)
  662. In a measuring cup, combine the olive oil, red wine vinegar, oregano and salt. Stir to combine.
  663. Pour the marinade over the onions. All the onions should be covered.
  664. Let it sit on your counter for at least 12 hours.
  665. Will keep for at least 5 days on the counter.
  666. NOTES
  667. I don’t recommend storing these in the refrigerator. The oil solidifies. If you’re getting past the 5 days, you could store in a mason jar and refrigerate. You’ll just have to bring them to room temperature when you want to eat them again.

  790. Place 2 chocolate bar silicone molds on a flat board or plate. I recommend placing a piece of parchment paper between the mold and the plate. This prevents the silicone mold from sticking to the plate when you freeze the bar later in the recipe. Set aside.
  791. In a small saucepan, under medium heat, melt the cocoa butter.
  792. When fully melted, remove the saucepan from the heat and stir in stevia drops, powdered sweetener (not crystal! you don't want bits in your chocolate), and salt.
  793. Return to medium heat until cocoa butter slightly boils and reaches 250°F (121°C), it's the temperature at which the erythritol will dissolve and prevents a gritty texture in your chocolate.
  794. Remove from heat and stir in unsweetened cocoa powder.
  795. Stir quickly and immediately transfer the liquid into the 2 silicone mold to fill them up to the top. Working quickly prevents the cocoa powder and cocoa butter from separating and creates the most consistent bars.

  797. Remove from the freezer, flip over the chocolate mold onto a flat surface and peel off the mold from the bar to release.
  798. Store the chocolate bars in the fridge in an airtight box or at room temperature. The melting point of cocoa butter is 93°F (34°C), so if your house is not that warm, the chocolate bars won't melt in the pantry.

This is definitely one of those set it and forget it recipes that you're going to keep in your back pocket. Using the sauté feature, you can easily develop flavors by cooking the mirepoix (that's onions, carrots, and celery) before adding the remaining ingredients.

  1104. Instant Pots are amazing for soup. You simply add ingredients, set your Instant Pot to high, and press go! Soups are done in less than 20 minutes.
  1105. Will the flavors taste the same?
  1106. Yes—but any time you make soup if you first sauté your aromatics (onion, celery, garlic, etc) before adding your broth and other ingredients, it helps build flavor. The whole point of the Instant Pot is, well, that the soup is done in an instant, so we skip flavor building here :)
  1107. What goes into lentil soup?
  1108. We love lentil soup for its versatility. We add onion, carrot, celery, and garlic as a base, plus canned tomatoes and fresh thyme. Lentil soup of course also needs lentils. The 18 minute wait is the time the lentils take to cook.

  1151. Is there anything the Instant Pot can't do?! After scrolling through all of our amazing Instant Pot recipes, we know what your answer will be. But one of its absolute best uses is for soups. Soups, especially something like split pea, often improve with a a couple of hours of simmering and flavor melding. An Instant Pot can do it in a fraction of the time. Truly, if you take a phone call you may miss it. Here are answers to some frequently asked spilt pea questions:
  1152. What's a split pea?
  1153. A split pea is a dried pea that has its skin removed and is then "split." They're low-fat, super high in protein, and they have tons of fiber. Though most commonly thought of as being used in soup, they have a ton of applications that are more delicious than the next.
  1154. What is split pea soup?
  1155. It's one of the oldest soups we eat, dating back to the Roman ages. At its most basic and more current form, it's a soup made from dried spit peas, a liquid like stock or water, and ham. That ham can take many forms from ham steak to smokey ham hocks.
  1156. What's the difference between yellow and green split peas?
  1157. Green split peas tend to be a little sweeter than more mild and earthy tasting yellow split peas.
  1158. Can I use bacon instead of ham?

  1161. Thought ham adds a delicious smoky flavor, it isn't at all necessary. To mimic some of that hearty flavor you can add a bit of red miso for a bit of umami and body. As far as the chicken broth, it can simply be swapped with vegetable broth or water.
  1162. Do I need to sauté the vegetables first?
  1163. We like to! This is a step when making soup that helps develop flavor. If you don't want to deal with a quick sauté, simply add all of your ingredients to the Instant Pot and follow the instructions in step 2.
  1164. What's a substitute for leeks?
  1165. Prepping leeks can be annoying, but we love their flavor that we put up with it :) A white or yellow onion is a fine sub.

  1252. When the pin in the lid drops down, open the lid. Stir the soup and separate any noodles that stuck together (sometimes I get a few). Then add the Parmesan and the mozzarella cheeses. Stir well and let melt. Then add the spinach and cottage cheese.
  1253. Serve in bowls with fresh basil or parsley, and extra parmesan cheese.

  1255. *I prefer cottage cheese in my lasagna as I think the flavor is more savory, and the texture is creamier than ricotta. Use what you like!

  1273. I don’t do white flour pasta, but use alternative pastas, and I have some green lentil lasagna,,,,can you tell me how I would adjust the time for this?

  1277. I have never used that kind of pasta (but it sounds great!). I read several reviews that stated to not precook it, just layer them in. I would try that. If they are too soft, you will know to cook a little less next time. If too al dente, cook a little longer. I’m going to buy some as the reviews are great, so thank you for the question!

  1281. I used 1/2 box of the green lentil lasagna pasta noodles, brand name is Explore, and the 6-minute instant pot timing you suggested in the recipe and they came out perfect! Thank you, this is a very yummy recipe!

  1284. Can I add to this to make a pan for about 10? Will it fit in an 8 Qt pot if I do? Also, can I eliminate the tomato ingredients and use a Spaghetti sauce?

  1288. Yes. This will fit in an 8-quart, maybe not doubled, but half again as much.
